A few days ago Gail Parker stopped by to pick up a start of our Night Blooming Cereus and surprised us with an entire peanut butter pie. It's certainly delicious and I asked her for the recipe.
Gail's Peanut Butter Pie
4 oz. cream cheese
1 cup confectioner's sugar
1/3 cup smooth peanut
butter
2 cups cool whip
1 graham cracker pie shell
Whip cream cheese until soft and fluffy. Beat in sugar and peanut butter until well mixed. Fold in topping and spoon into graham cracker crust pie shell. If desired, sprinkle chopped peanuts on top. Chill until firm.
Gail said she doubles the recipe because she can no longer find 4 ounce packages of cream cheese.
Tom and I have been in heaven all week!
